2022 Simon Bize & Fils "Aux Vergelesses" - Savigny lès...

Savigny-lès-Beaune 1er Cru Aux Vergelesses Blanc 2022, signed Domaine Simon Bize et Fils, embodies the excellence of the white wines of the Côte de Beaune. From an exceptional 0.30-hectare plot planted with Chardonnay on a very steep hillside, this wine expresses all the finesse and tension of an outstanding terroir made up of sandy marls and limestones. On the nose, this Savigny-lès-Beaune white reveals aromas of citrus, white fruit and a mineral touch characteristic of the great Burgundy crus. On the palate, it offers a fresh, precise attack, followed by generous breadth and a long, persistent finish where lemon notes, a touch of noble bitterness and a saline thread typical of the Aux Vergelesses climate reveal themselves. Made using traditional methods (fermentation with indigenous yeasts, partial élevage in barrels), this gastronomic white wine is perfect to accompany gravlax salmon, roasted chicken, seafood or characterful cheeses. It can be enjoyed now after a 30-minute decanting, but reveals its full complexity after a few years of aging (2026–2032+). Domaine Simon Bize et Fils, a cornerstone reference of Savigny-lès-Beaune since 1880, signs here an authentic wine, faithful to its terroir and perfectly suited to lovers of great Bourgogne whites. A wonderful opportunity to enrich your cellar or to offer an exceptional wine as a gift.
