Grattamacco has chosen a “naked” vinification, where the fruit’s perfection is accompanied in its natural transformation into wine. The grapes, carefully selected during harvest, are allowed to ferment spontaneously in open truncated-conical vats. No controlled temperatures, but a constant presence in the cellar for manual punch-downs and for monitoring macerations, which are slow and delicate. Malolactic fermentation takes place in French oak barriques, keeping the different varieties distinct. The aging is in small oak barrels, followed by assemblages and a long rest in bottle. The work is done by hand with the aim of minimal intervention. Attention is paid to the details and the real needs of the wines, in search of a “pure,” “untouched” style capable of restoring the authentic link between wine and its land. The idea of L’Alberello was born as a response to extremely hot and dry climatic conditions, since this training form is more resilient to such conditions. The particular distribution of the vines allows harvesting Cabernet Sauvignon and Cabernet Franc grapes simultaneously, forming a true blend. The joint fermentation of the two grape varieties yields particular balsamic and spicy notes, which gain depth and breadth with aging in barriques for a maximum of 18 months.
