This unique wine comes from the coolest vintage of the century, a gem that exudes subtlety and elegance thanks to its four years of aging in Bordeaux barrels. Tim Atkin 94 Rosé Report, Elizabeth Gabay MW 96 Decanter 95 Varietals: Garnacha and Viura. Aging: Four years in Bordeaux barrels followed by bottle aging. The oak barrels, of the Quecus petraea species, come from a special selection of forests in France and Eastern Europe; most of the oak is new, although some second-use barrels were also included. Harvest: Hand-picked in a single day, September 27th. Vineyard: Old bush vines located on clay-ferrous terraces in the Alto Najerilla region at high altitude, on the slopes of the Sierra de la Demanda mountain range and facing north. Winemaking: Harvested on October 17th. Maceration for 24 to 48 hours at low temperatures, around 10ºC. The must is then drawn off from the tank, naturally extracting a bright, pinkish juice, which ferments at 16ºC for approximately 20 days in stainless steel tanks. Alcohol content: 13.31% Vol. The label features Cruz Manso de Zúñiga, "The Professor." He was a crucial figure in the fight against the phylloxera plague that devastated Rioja's vineyards at the beginning of the 20th century. His work also helped improve winemaking techniques and preserve the region's native grape varieties. Visual: Salmon-colored with coppery highlights and great intensity. Its deep hue is due to prolonged aging, and it also displays some gray tones at the rim. Nose: Nose stands out for its fragrant and silky essence, very unique and with great character. Floral and soapy notes predominate, along with fruitier tones of grapefruit and orange peel. Balsamic and menthol descriptors are also perceived, giving it a special freshness. In addition, notes of vanilla and hay blend together, integrating into the aromatic matrix, resulting in a wine with a marked personality. Palate: It has a broad entry, with very good balance as it passes through the mouth, where ethereal sensations are the common denominator. With great length, it is a wine that exudes subtlety and elegance. It has some final saline touches that increase its complexity. In the finish, stone fruit appears, and pleasant tactile memories linger.
