Wine/vineyard history: Philippe Pacalet, nephew of Marcel Lapierre and former collaborator of Henri Jayer, is renowned for his fermentations with indigenous yeasts and whole-harvest vinifications, with no additives; the two cuvées come from two distinct 1er Cru climates of Gevrey-Chambertin — Lavaux Saint-Jacques (often considered close to a Grand Cru in quality) and Bel-Air.
